Sicilian Ricotta Cheese Cake
I love Cheese Cake! I mean, who doesn't?? There are so many Cheese Cake recipes out there, but I really like this one, especially since it has ricotta cheese in it. It tastes really light and of course very yummy! I do always try to add things to make it a bit different. I hope you guys enjoy it!
INGREDIENTS:
- 1/3 cup of flour
- 1 cup of sugar
- 6 eggs
- 1 stick butter
- 3 1/2- 4 cups of Ricotta Cheese
- 1 orange ( for the orange zest)
- 1 teaspoon of almond extract or vanilla extract
- 18 honey graham crackers ( 2 packets from the 14 ounce box)
- 1 tablespoon of powdered sugar
INSTRUCTIONS:
Heat oven to 350 degrees F.
Grease a 10 inch pan with butter.
Crush the graham crackers in a food processor, then stir it with melted butter. Firmly press graham crackers into bottom of the pan and set aside.
Mix the sugar and flour together in a bowl.
In a medium bowl mix together the Ricotta cheese and the orange zest. Fold in the flour and sugar and stir slowly with spatula. Add the eggs one at a time, and add the vanilla or almond extract.
Pour the batter into the pan and smooth the top with the spatula.
Bake for 60 minutes or until the cake is firm all the way on top. Cool completely and refrigerate for 2 hours at least to set.
Dust top of the cake with powdered sugar.
